Vegetarian Taco Meat (vegan, paleo, gf, df)
You're only 25 minutes from having delicious, meatless tacos with this super easy Vegetarian Taco Meat with homemade taco seasoning!
Did you know that most store-bought taco seasonings contain a bunch of unnecessary ingredients, including wheat flour and sugar? I know right, it's crazy! That's why this meatless taco meat includes a homemade version of taco seasoning! Wohoo!
Vegetarian Taco Meat
Serves: 2-3
Prep and cook time: 25 minute
Ingredients:
1 can black beans, drained but NOT rinsed
1 medium tomato, chopped
1 TBS water
Homemade Taco Seasoning (recipe adapted from Mary Ellen):
1 TBS chili powder
3/4 TBS paprika
1/2 TBS onion powder
3/4 tsp garlic powder
3/4 tsp cumin
1/2 tsp oregano
pinch of salt, to taste
pinch of pepper
Directions:
Mix the taco seasoning ingredients in a small bowl.
Over medium low heat, add a can of beans and the tomatoes to a frying pan.
Mix the taco seasoning ingredients into the black beans and chopped tomatoes. Then add the water and mix again.
Cover the frying pan and cook on medium low heat for 15-20 minutes. Make sure to keep an eye on the taco "meat" and mix it a few times.
Enjoy taco meat on top of a salad, in a tortilla, on top of nachos, etc!
