Chocolate Peanut Butter No-Bake Bars (gf, refined-sugar free)

Seriously quick and oh so delicious Chocolate Peanut Butter NO-BAKE Bars! I've tested this recipe about 3 times this past week, so it's safe to say that this recipe is foolproof, not too mention yummy!

My grandma passed on Wednesday, so we had a lot of family time at our house the past 5 days. My three uncles came and spent a few hours everyday at our house, so these No-Bake Bars were taste-tested by many! And let me tell ya, they were a hit with the uncles! I even made my uncle his own batch of them so he can enjoy them for breakfast this week with his coffee, his words not mine😋😉.

I hope you enjoy these easy 10 minute No-Bake Bars as much as we have been!

Chocolate Peanut Butter No-Bake Bars (gf, refined-sugar free)

Serves: 5 large no-bake bars or 10 smaller ones

Ingredients:

1/4 cup cacao powder

1/4 cup plain Greek yogurt ( I use Chobani)

1/4 cup + 1 TBS honey

2 TBS natural, creamy peanut butter ( I love this brand!)

1 TBS melted coconut oil ( I first melt my coconut oil, and then I measure it out)

1 1/4 cup gluten-free oats ( OR regular oats if you don't need gluten-free oats!)

Optional: 2 TBS chocolate chips (I love chopping up Eating Evolved chocolate!)

Directions:

  1. Mix the cacao powder, plain Greek yogurt, honey, and peanut butter together in a medium-sized bowl.

  2. Add in the melted coconut oil, and stir.

  3. Stir in all of the oats, mixing until all of the oats are fully coated in the chocolate-butter mixture. Add in the chocolate chips if using them.

  4. Press the mixture into a small parchment-lined dish ( to make for easy clean-up, I use a small tupperware so I only have to put a lid on it to store!) and place it in the freezer for at least an hour.

ENJOY! Store in the freezer, covered, for up to one month.
