Healthy Oatmeal Chocolate Chip Cookies

OATMEAL CHOCOLATE CHIP COOKIES: Serves: 12 1.5” by 1.5” cookies

Dry Ingredients: 3/4 cup oats 3/4 cup + 1 TBS almond flour 1/4 cup + 1 TBS coconut sugar 1/2 tsp baking soda

Wet Ingredients: 1 TBS ghee 1 egg 1 tsp vanilla extract

1/4 cup chocolate chips (I LOVE chopping up 1/2 of an @eatingevolved chocolate bar! Use the previous link for a FREE chocolate gift on Eating Evolved or enter code emilymtmt at checkout!)

Directions: 1.) Preheat the oven to 350F. 2.) Mix the dry ingredients in a large bowl. 3.) In a microwave-safe bowl, microwave the ghee until it is softened. Then add in the egg and vanilla extract. Mix well. 4.) Add the wet ingredients to the dry and stir really well. Lastly, mix in the chocolate.

5.) Form the dough into balls and place on a parchment-lined baking pan. 6.) Bake for 9-10 minutes for soft cookies! 😍 Store in fridge for 3-4 days. ENJOY!
