4 Ingredient Peanut Butter Chocolate Bars (low sugar,vegan, paleo-friendly)

Ingredients:
1 cup creamy natural peanut butter (my recent fave is the Trader Joe's Salted Peanut Butter)
4 large medjool dates, pitted (or 1/4 cup maple syrup if you don’t have dates or want the bars to be sweeter)
1/4 cup coconut flour
1 chocolate bar or 1 cup chocolate chips ( I like using an Eating Evolved bar OR you can melt 1/2 cup coconut oil and mix it with 1/2 cup cocoa powder + 1 TBS maple syrup if you don't have any chocolate on hand)
Directions:
In a food processor, add the peanut butter and dates (or maple syrup). Blend for about 1-2 minutes, or until the dates are all blended up.
Add in the coconut flour and blend again until a soft dough forms. It may be a bit sticky (that's ok!).
Line a small container with parchment paper and press the peanut butter mixture into it ( I like using a smaller container so I have thicker peanut butter bars).
In a small microwave-safe bowl, melt the chocolate (start with about a minute and then go by 15 second intervals if you need to melt it more).
Pour the chocolate over the peanut butter mixture.
Freeze for at least 2 hours before serving.
I recommend storing them in the FREEZER or else they’ll get too soft! If you want them to be stored in the fridge, then roll the dough into balls & dip them in chocolate!
