Spinach Feta Savory French Toast Casserole

Spinach Feta Savory French Toast Casserole

serves: 4-6

Ingredients:

5 bagels ( I used Pagels which are smaller than your average bagel; if using regular-sized bagels, I'd suggest using three)

1 TBS avocado oil (or olive oil or butter)

1 large white onion, chopped

1 TBS balsamic vinegar (optional but adds a yummy flavor)

2 handfuls of fresh spinach

6 organic, cage-free eggs

¾ cup milk ( I used whole milk, but you could use skim, almond/flax milk, etc)

Salt and pepper, to taste

4 oz feta cheese

Directions:

  1. Spray a glass pie dish with non-stick spray. Cut the bagels lengthwise and then chop them up (I cut them into 8ths). Add the chopped bagels to the pie dish and spread them out evenly, gently pressing them down with your hands.

  2. Preheat the oven to 350F if you're baking the casserole immediately.

  3. Heat a large cast-iron skillet over medium-low heat. Add the avocado oil and onions. Let them saute for about 5 minutes or until until they are translucent, stirring occasionally. Once the onions are finished cooking, add the balsamic vinegar and stir (optional). Add the spinach and let it cook down until it's wilted, about 1-2 minutes. Remove the skillet from the heat and set aside.

  4. In a large bowl, whisk together the eggs, milk, salt, and pepper. Then add in the onion-spinach mixture, stirring well.

  5. Evenly pour the egg mixture into the pie dish, making sure all the bagel pieces get coated with it. Evenly sprinkle the dish with feta.

  6. Cover the pie dish with tinfoil. Now there are two options; Option 1: Bake it in the preheated oven with the tinfoil on for 20 minutes. Then remove the tinfoil and bake it for another 25-30 minutes, or until the top gets nice and golden. OROption 2: refrigerate the casserole overnight and bake it in the morning, following the same baking instructions as in option 1.

  7. Allow the casserole to cool for 5 minutes before slicing and serving.

Store in an air-tight container in the fridge for 3-4 days.
