Grain Free Peanut Butter Chocolate Chunk Cookies (df, gf, refined sugar free)

Grain Free Peanut Butter Chocolate Chunk Cookies (df, gf, refined sugar free)

Serves: 12-15 cookies  

Ingredients: 

1 cup creamy peanut butter  

1/2 cup maple syrup  

1 egg  

1 tsp baking soda

1 cup almond flour  

1/2 cup chopped peanuts  (or you can use chocolate or another add-in!)

1/2 cup chocolate chips/chunks  

Directions:

1.) Line a baking sheet with parchment paper or a silicone baking mat. Set aside.

2.) In a medium-sized bowl, mix together the peanut butter and maple syrup until smooth. Then add in the egg and stir well.

3.) Stir in the baking soda and almond flour until combined. Pour in the peanuts and chocolate chips and mix again. 

4.) Place the bowl of dough in the freezer (don’t skip this step!!!) and pre-heat the oven to 350F.

5.) Once the oven is pre-heated, pull out the cookie dough, roll it into balls (a little smaller than a golf ball), and place them on the cookie sheet. (For fluffier, taller cookies, don’t flatten the balls. If you don’t want them to be fluffy like the one in the picture above, use a fork and gently press the tops of the cookie dough balls down).  

6.) Bake for 11 minutes or until lightly golden brown for soft, chewy cookies, or bake longer for crispier ones.
