Peanut Butter Energy Bites (gf, df)
Energy bites: simple to make, delicious, and packed with nutrients! Everyone who tries these peanut butter bites can't get enough of them. The best part is that the recipe only calls for THREE ingredients:
Oats (rolled or quick oats both work!)
Peanut butter (or any nut butter)
Honey (or maple syrup if vegan)
Peanut Butter Energy Bites
Yields: 20 energy bites
Total time: 15 minutes
Ingredients:
1 3/4 cup rolled or quick oats (use gluten free oats if gluten free)
3/4 cup natural peanut butter
1/3 cup honey (or maple syrup)
Optional: chocolate chips
Directions:
Place oats in food processor and blend until they become a flour.
Add in peanut butter and honey and blend until a dough-like consistency forms.
Optional: stir in chocolate chips by hand and mix well.
Lastly, either roll the dough into balls OR press the dough into a container and cut the dough into little bite-sized pieces.
Store in the refrigerator and enjoy for up to a week!
