Homemade Paleo Bread (Erewhon Style)

Homemade paleo bread!! So I have seen many of my favorite food bloggers like Jeannette Ogden (@shutthekaleup) and Lee (@leefromamerica) buy this paleo bread from Erewhon Natural Foods, an organic grocery store, but the bread costs a pretty penny ($16)! Since I don't live on the west coast where they buy this bread, I set out in the interweb to find a recipe for it instead!

Last night I came across a paleo bread recipe that used all of the same ingredients as the Erewhon bread, so I decided to give it a whirl! The recipe I found was already pretty self explanatory, but I simplified it even more buy using only one bowl to mix everything in (less dishes!) and tweaked the recipe just a bit!

I hope you enjoy this bread as much as my mom, sister, and I do! We made breakfast sandwiches this morning, but the possibilities are endless with this bread! Here are a few ideas:

Egg sandwich

French toast

Toast with nut butter

Avocado toast

Turkey sandwich

PB & J...

The list could go on and on!

Homemade Paleo Bread (Erewhon Style)

Makes 1 small loaf (or 3 mini loaves which is what I did )

Ingredients

3/4 cup almond flour

erewhon sandwich

1 TBS coconut flour

2 TBS golden flaxseed meal

A tiny pinch of sea salt

1/2 tsp baking soda

2 eggs

1 egg white

1 TBS coconut oil

1 TBS honey

1 TBS apple cider vinegar

Directions:

1. Mix all of the ingredients EXCEPT the eggs in a medium sized bowl until combined.

2. Add in 2 eggs and the one egg white to the medium bowl. Mix until fully combined

3. Pour batter into a small greased loaf pan or three mini loaf pans.

4. Bake at 350° F for about 25-35 minutes (for a small loaf pan) or 12-18 minutes (for mini loaf pans). The baking time depends on the size of your pan!

PS: Since I don't live on the east coast where the Erewhon Paleo bread is located, I have never tried it and therefore cannot say it tastes the same as my homemade version. They look VERY similar in texture though!!
