3 Ingredient Peanut Butter Cookies (with beans!)
3 ingredients. Peanut Butter. Cookies. Beans.
BEANS? Yes, I know what you're thinking, "That's weird and gross". Fear not!! I PROMISE that you do not taste the beans at all. Trust me, I've tried baking many "healthy " desserts with funky ingredients that I DO taste! YUCK! Who wants to taste avocado in their chocolate cookies? Not me!
Anyway, I personally think these peanut butter cookies are the BEST healthy dessert I have ever made! If you know me well, then claiming these as the "best" healthy dessert is a BIG deal! It's bigger than big, it's HUGE!
My mom, the "dessert snob" (she was deemed this name by my dad LOL) also goes exceptionally crazy over these peanut butter cookies! She begged me to make a second batch of these PB babes after dessert. Yep, after we ate dessert! Oh yeah, my family loves two rounds of dessert, especially when dessert is nutrient dense with lots of protein and healthy fats!
I truly hope you thoroughly enjoy these peanut butter bean cookies as much as my family, friends, and I do!
3 Ingredient Peanut Butter Cookies (with beans!)
Paleo, Grain Free, Vegan Friendly
Yields: about 10 cookies
Ingredients:
1 15 oz can Great Northern beans, drained
1/2 cup + large extra spoonful peanut butter
1/4 cup honey (or maple syrup if vegan)
Optional: chopped chocolate, to top the cookies after baking ( I LOVE using Eating Evolved chocolate!)
Directions:
1. Preheat oven to 350F.
2. Blend the drained beans in a food processor until smooth {unless you want chunks of beans in your cookies :-) }.
3. Add peanut butter and honey to the beans in the food processor and blend until well combined.
4. Spoon dough into silicone baking cups (or foil baking cups)**.
5. Bake for 12-15 minutes. They will be soft and gooey!! If you like crispier cookies, bake them longer. (Though, I have never baked them longer than 15 minutes, so I do not know from experience).
6. Top each warm cookie with a piece of chopped chocolate.
ENJOY!! We don't even let these cookies cool very long because they are sooo amazing when they are warm (ok, hot!) straight from the oven!
**Note: Though I use silicone baking cups, I still spray them with a bit of non-stick baking spray to ensure that the cookies come out easily!
