Chocolate Covered Peanut Butter Bananas (vegan, df, gf)

While everyone is celebrating National S'mores Day, I am over here toasting to National Banana Split Day with chocolate covered peanut butter bananas!! I didn't even know it was Banana Split Day until 5 minutes ago, but I'm just rolling with it! LOL

Don't let the long title of these sweet treats fool ya! They are SUPER easy to make, and I'm not even sure I can call this recipe a recipe!

You only need THREE ingredients that I'm 99% sure are in your pantry or kitchen:

•A banana (or a few!)

•Peanut butter

•Melted Chocolate OR melted Eat Nuttzo chocolate fuel spread

If you're wondering what the chocolate fuel spread is, it is basically a more nutrient dense form of Nutella! It is made out of several types of nuts and uses Eating Evolved chocolate!

Eating Evolved is a FANTASTIC company that has created the ultimate healthy chocolate. YES, good-for-you chocolate! The ingredients in all of their products are VERY minimal and organic! They sweeten their yummy dark chocolate with coconut sugar which is a natural sweetener that's low glycemic, meaning that it does not spike your blood sugar when it enters the bloodstream!! They even have a chocolate bar called the "Midnight Coconut" which is 100% cacao and has zero added sugars, including natural ones-- I'm dying to get my hands on some of this and try it. :) YAY for real chocolate AND a sweet treat that doesn't lead to a sugar crash!

PS: Eating Evolved is also coming out with new chocolate that's cashew milk based (right now they have products that are mostly made of coconut products)!!

They can be personalized any way you'd like:

rolled in chia seeds, coconut, nuts, etc! I hope you enjoy!

Chocolate Covered Peanut Butter Bananas

Ingredients:

1 Banana

A few TBS of chocolate OR Eat Nuttzo chocolate spread

A few TBS of peanut butter (or your preferred nut/seed butter!)

Optional: chopped nuts, coconut, chocolate chips, or any of topping!

Directions:

  1. Cut the banana into thirds.

  2. Spread peanut butter on top of each slice of banana and place on a parchment-lined plate. Refrigerate for about 20 minutes.

  3. Melt the chocolate in a microwave-safe bowl. Using a spoon, spoon the melted chocolate over the peanut butter bananas.

  4. Optional: sprinkle your favorite toppings over the chocolate covered peanut butter bananas and ENJOY!!Store in the fridge for 2-3 days.
