Easy Banana Waffles (gf, df, refined-sugar free)
Happy Waffle Wednesday!! Hot off the waffle iron is a new, super duper easy waffle recipe that will leave you feeling fueled for your day! They are naturally sweetened by ONLY banana and are oh so delicious!
I've tested these waffles with both almond flour and oat flour (which is just oats blended in the food processor/blender until they resemble a fine powder/flour). They turned out great BOTH ways!
When I ate these waffles, I folded them like tacos and filled them with plain Greek yogurt (I like Chobani and Siggi's ), Driscoll's berries, and melted Eating Evolved chocolate! 😍 Eating Evolved chocolate is AMAZING and is only sweetened with coconut sugar, an unrefined sugar that's low glycemic which means it won't spike your blood sugar! These waffles seriously are like dessert without all the sugar and carb coma!! ENJOY!!!
Banana Waffles
Time: only 10 minutes!!
Serves: 2 waffles (depending on the size of your waffle iron)
Ingredients:
1/2 banana
1 egg
1/2 cup almond flour (I've also used oat flour which works well.)
1/2 tsp baking powder
1/4 tsp baking soda
1/2 TBS apple cider vinegar
pinch of cinnamon
Optional: 2 TBS chocolate chips (I love chopping up Eating Evolved chocolate!)
Directions:
1.) Mash the banana in a small bowl.
2.) Add in egg and mix until combined.
3.) Next, add in the almond flour (or oat flour), baking powder, baking soda, cinnamon, and apple cider vinegar. Mix until well combined.
4.) In your pre-heated waffle iron, cook waffles according to your machine's directions (I cook my waffles in a 400F preheated waffle iron for 4 minutes).
5.) Top waffles with yogurt, nut butter, chia seeds, real maple syrup, or whatever you want!!
