Dairy free Peanut Butter Ice Cream (no ice cream maker needed! Dairy, grain, and gluten free )
3-ingredient peanut butter ice cream is here ya'll!! You better believe it!! Exceptthis ice cream is coconut milk based and refined-sugar free!! It's sweetened with only two tablespoons of honey and uses my all time FAVE peanut butter, Crazy Richard's!
Crazy Richard's peanut butter only contains ONE ingredient, peanuts! You may think this is obvious, but if you look at the ingredients in the peanut butter jar in your cupboard, I can almost guarantee that sugar and oil are listed! That's no bueno😐

Back to the ice cream! It's only three ingredients, does not require an ice cream maker, and is so versatile! Feel free to mix in any of your fave ice cream toppings! I chopped up some of my healthy brownies because chocolate + peanut butter= my heart😍

Dairy Free Peanut Butter Ice Cream
Time: 8 minutes (not including freezing time)
Ingredients:
1 can full fat coconut milk, refrigerated for an hour ( I like this kind)
2 TBS honey (or maple syrup)
1/2 cup creamy, all natural peanut butter (Crazy Richard's is my fave!)
Optional: any mix-ins of your choice (I did brownie pieces!)
Directions:
1.) Dump the can of full fat coconut milk into a medium-sized bowl. The cream and water will be separated, but that's ok!!
2.) With a handheld mixer, beat the full fat coconut milk until the cream and water are combined (it only takes about 20 seconds!!).
3.) Add in the honey and peanut butter. Beat all of the ingredients until they are fully combined and the mixture looks creamy! (I suggest beating for about two minutes to get it nice and frothy. It helps the ice cream be creamie😋)
4.) If adding mix-ins, STIR them in with a spoon! Do not beat them in with the mixer.
5.) Pour content into a freezer-safe container. Place it in the freezer until firm.
Allow ice cream to thaw for about 20 minutes before serving if it's fully frozen, and ENJOY!!
