Roasted Sweet Potato Fries with Onion
Who else loves roasted sweet potato fries?ππ» I sure do!!
I love to roast them on the weekend before the school week! Then I can easily pair the sweet p's with some chicken or leftover protein from last night's dinner for an easy and delicious lunch.
Here are a few tips for roasting sweet potatoes:
1.) Be cognizent when putting the sweet potatoes in your pan-- make sure that they aren't stacked on top of each other; stacking will prevent them from getting crispy. Since I like to roast a few sweet p's at a time in just one pan, I often times place the onion on top of the sweet potatoes to save space on the bottom for my potatoes. π
2.) Since they roast at 400F and then are broiled at the end, try to coat your sweet potatoes and onion in an oil that has a high smoke point. I like using avocado oil because it's heat point is about 500F, so even when the potatoes are being broiled at a hot hot temp, I know that I'll still be reaping the benefits from the healthy fats in the oil. On the other hand, when anything is roasting at a high temperature and is coated in a lower heat oil, like olive oil, the nutrients from that oil are killed and you no longer get any nutritional benefit from the oil.

Sweet Potato Fries with Onion
Ingredients:
3 medium sweet potatoes, first cut lengthwise and then into strips/wedges/ however you like your sweet potato :)
1/2 large onion, sliced into quarters
1 TBS avocado oil
sea salt, to taste (I used 1/8 tsp)
Ground pepper, to taste
Directions:
1.) Preheat oven to 400F.
2.) Place the cut up sweet potatoes and onion on your baking sheet or pan.
3.) Drizzle the avocado oil over the sweet potatoes and onion. Also, sprinkle salt and pepper.
4.) Using clean hands, mix the potatoes and onions around until everything is fully coated.
5.) Make sure to line up your sweet potatoes in the pan so they aren't stacked on top of each other to ensure crispiness!
6.) Place the pan into your preheated oven, and bake for 30 minutes. Then flip the sweet potato fries and onion and cook for another 15 minutes.
7.) Turn on the broiler and broil the fries for about 2-3 minutes. Make sure you DO NOT LEAVE the oven, as they can burn very quickly because the oven is so hot. If you would like, flip the fries and onion once more and broil for another 2 minutes. Again, make sure you watch the sweet potato fries the ENTIRE time they are under the broiler.
Remove from the oven, and ENJOY!!
