Alright friends, I'm sharing with you THE perfect fall recipe... which can easily be made in 15 minutes... *drum roll please*....

pumpkin muffins!

So, let me tell you, I have been working on this pumpkin muffin recipe for the last week and a half, and I am pretty positive that I have finally nailed this recipe!

I brought these muffins to school... a) everyone that tried them loved them, b) no one could tell they healthy, and c) my dad really liked these muffins-- and let me tell you, it is hard to please my dad with healthy desserts/ snacks!

OR, you can turn this recipe into a small loaf of pumpkin bread!! I love how versatile this recipe is! I bet that you could even top these muffins with cream cheese or chocolate frosting! Oh, and I love adding chocolate chips to the batter, too, because I love chocolate!!

They are :

~moist

~naturally sweetened with maple syrup

~easy to whip together (15 minutes and 9 ingredients (4 of which are spices and baking soda!)

~made using oat flour ( Don't fret, you don't need to buy oat flour-- all you have to do is grind up oats in a food processor or nutribullet until they turn into a fine flour! Super simple, and super cheap!!)

~and probably the best part... these Pumpkin Muffins taste like Trader Joe's pumpkin bread!

Don't get me wrong, I love the easy Trader Joe's pumpkin bread mix, but it isn't exactly packed with nutrients! AND, their bread can only be bought in the fall which means that my family doesn't need to stock up on it and buy a few extra twelve boxes... lolz.

I hope you love, love, LOVE these pumpkin muffins as much as I do-- they will surely fill your heart and your home with the wonderful smells of pumpkin, spice, and everything nice!

Pumpkin Muffins (gluten, dairy, & refined-sugar free)

You can also make a small loaf of pumpkin bread if you wish! Super delicious too!😋

Prep Time: only 15 minutes

Makes: about 7-8 muffins, or 1 small loaf of bread

Ingredients:

1 egg

1/2 cup pureed pumpkin

1/4 cup plain applesauce

1/4 cup pure maple syrup

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp cloves

3/4 cup oat flour*-- use certified gluten free oats to make this recipe gluten free!  (*To make the oat flour, just blend 3/4 cup of oats in a food processor or nutribullet until it resembles a fine flour! So easy, right?!)

Optional: 1/4 cup chocolate chips, nuts, or raisins  ( I LOVE adding Eating Evolved chocolate!)

Directions:

  1. Preheat oven to 350F. Line a baking sheet with muffin molds or aluminum tins.

  2. In a medium bowl, mix together all of the ingredients except the oat flour.

  3. Mix in the oat flour to the medium-sized bowl until well combined.

  4. Mix in chocolate chips/your preferred mix-ins.

  5. Pour pumpkin batter into muffins molds.

  6. Bake muffins for about 23-28 minutes, or until the tops of the muffins springs back when you touch them.
