Gingerbread Cookies (paleo, grain free)
The Christmas season is here! And so are these DELICIOUS Gingerbread Cookies!
The best part about these cookies?! They are family (and friend) APPROVED!! Whoot Whoot! Whenever my dad likes a dessert that has been "healthified", you KNOW it is a keep, just saying!
Healthy Gingerbread Cookies (paleo, grain free)
Serves: 12-14 cookies
Ingredients:
1 TBS ghee, softened
2 TBS + 2 tsp unsulphured blackstrap molasses (or just regular molasses if not paleo!)
1 SMALL egg
Dry Ingredients:
1 3/4 cup + 1 TBS almond flour
1/4 cup + 2 TBS coconut sugar
1/2 tsp baking soda
1 1/2 tsp ginger
3/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
Directions:
1.) Line a cookie sheet with parchment paper.
2.) In a small microwave safe bowl, add the ghee and soften in the microwave, (about 10-13 seconds).
3.) Add the molasses to the ghee and stir well. Then, add the small egg and mix well again.
4.) In a separate, large bowl, add all the dry ingredients and mix well.
5.) pour the wet ingredients into the dry, mixing thoroughly.
6.) Chill dough in the freezer (yes, the freezer!) for 20 minutes (or in the fridge overnight).
7.) Preheat the oven to 350F.
8.) Take the dough out of the freezer. Roll into balls** and place on parchment-lined cookie sheet. Press cookies down with your (clean!) fingers.
9.) Bake for 14-16 minutes for a crisp-on-the-outside and soft-on-the-inside kind of cookie!
** Note: I've tried to make gingerbread men out of this dough, but it was too difficult because of the stickiness factor. (Though, if you do attempt to make gingerbread men, I highly recommend flouring your surface with gluten free/whole wheat/white flour. I've tried almond flour and it didn't work out.)
