Brownie Cookies (vegan, paleo, grain free)
Serves: 8 cookies
Ingredients:
1/4 cup creamy cashew butter
3 1/2 TBS coconut oil ( I use filtered coconut oil so it doesn't make the cookies taste coconutty)
1/4 cup unsweetened chocolate, finely chopped
3 TBS maple syrup
3 TBS cup coconut sugar
1/4 cup almond flour
1/4 cup + 2 TBS unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 cup chocolate chips ( I like chopping up an Eating Evolved chocolate bar!)
For 16 cookies:
1/2 cup creamy cashew butter
1/4 cup + 3 TBS coconut oil ( I use filtered coconut oil so it doesn't make the cookies taste coconutty)
1/2 cup unsweetened chocolate, finely chopped
1/4 cup + 2 TBS maple syrup
1/4 cup + 2 TBS coconut sugar
1/2 cup almond flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 cup chocolate chips ( I like chopping up an Eating Evolved chocolate bar!)
Directions:
Preheat your oven to 325F. Line a baking sheet with parchment paper and set aside.
In a medium microwave-safe bowl, add the cashew butter, coconut oil, and unsweetened chocolate. Melt in the microwave until you are able to stir everything together, about 45 seconds. (Make sure all of the chocolate is melted!).
Add the maple syrup and coconut sugar to the melted chocolate bowl.
In a separate small bowl, mix together the almond flour, cocoa powder, and baking soda.
Add the DRY ingredients in to the wet, stirring well.
Mix in the chocolate chips. At this point the dough should be pretty soft/sticky.
Now, place it in the fridge for 10 minutes to firm up a bit. (Note: even after refrigerating, the dough will be slightly sticky, and that’s exacty what you want! Please don’t add more flour 😉)
Using a spoon, scoop the dough and place it onto a parchment-lined baking sheet. Using your hands, slightly press the dough down and form it into a circular shape. The cookies should be about 1/4 inch thick.
Bake for about 10 minutes for a soft-on-the-inside melt-in-your-mouth cookie!
ENJOY! Store in a container for 3-4 days.
