Here is the first recipe of my Healthy Halloween Candy Series: Peanut Butter Cups! Enjoy!

Copycat Reese’s

serves:  7

Ingredients:

Chocolate Layers: 

1/4 cup + 2 TBS coconut oil

2 TBS maple syrup

1/4 cup + 2 TBS semi-sweet chocolate chips

3 TBS cocoa powder

Peanut Butter Filling:

1/4 cup creamy peanut butter 

1 TBS coconut oil

1 TBS maple syrup

Directions: 

1.) For the chocolate layer: in a medium-sized microwave safe bowl, add the coconut oil, maple syrup, and chocolate chips and melt for 1 minute. Stir everything together well and continue melting in 30 seconds increments if needed.

2.) Stir in the cocoa powder. Set aside. 

3.) For the PB layer: In a medium-sized microwave safe bowl, microwave the coconut oil for 20 seconds or until it’s melty. Mix in the peanut butter and maple syrup until well combined. Set aside. 

4.) In aluminum muffin tins or silicone baking cups, add 1 TBS of the chocolate mixture (save the leftover chocolate for the last step!!)

5.) Then, gently drop 1/2 tablespoon of the peanut butter mixture into the center of the aluminum cups. If the peanut butternut mixture doesn’t go exactly in the center, it’s okay! They don’t have to be perfect :)

6.) Laslty, add another tablespoon of the chocolate mixture on top of the cups. Place in the FREEZER for at least an hour and enjoy!

Store in a airtight container in the freezer.
