Healthier Peanut Butter Balls (gf, grain free, df)
Every Christmas my mom dips chocolate- she makes everything from caramel covered pretzels and thin mints to bark and peanut butter balls. With their creamy and sweet center, peanut butter balls have always had a special place in my heart, and today I’m sharing a healthier but seriously DELICIOUS recipe for them with you!
Healthy Peanut Butter Balls
Serves: 20 balls
Ingredients:
1 cup marshmallow fluff (I love this kind bc it doesn’t have any corn syrup in it and the ingredients are pretty awesome!)
1 cup creamy smooth peanut butter
1 cup peanuts (unroasted and unsalted)
1/2 tsp salt (omit if your peanuts are salted)
1/2 cup chocolate chips
1 TBS coconut oil
Directions:
1.) Over a double boiler, add the marshmallow fluff and peanut butter, stirring accasionally until they are well incorporated. Mix the peanuts in.
2.) Line a loaf pan with parchment paper and add the peanut butter mixture to it, evenly spreading it out. Place in the fridge for at least an hour (or overnight) to solidify.
3.) Once the peanut butter base has hardened, cut it into 20 squares (or your desired amount ). Roll the squares into balls and place them back in the fridge (this step it vital because it makes dipping the balls way easier! If you don’t refrigerate them, they’ll be too soft).
4.) Either in a microwave safe bowl or over a double boiler, add the chocolate chips and coconut oil and melt them, stirring sporadically.
5.) Dip the peanut butter balls in the melted chocolate and place them on a parchment lined baking sheet/plate to dry. To speed up the drying process, you can put them in the fridge!
Store in the fridge for up to 1 week, and ENJOY!
