Healthy Bakery Style Banana Bread (refined sugar free, df, gf, nut free)

Healthy Bakery Style Banana Bread

Ingredients:

2 eggs

2 TBS milk (dairy or non-dairy)

1/3 cup filtered coconut oil (not melted)

1 3/4 cup gluten free baking flour (or all purpose flour works) — spoon flour into measuring cup for best results

2/3 cup coconut sugar

2 tsp baking powder

1/2 tsp baking soda

1 tsp vanilla extract

1.5 cups mashed banana

3/4 cup chocolate chips

optional: 1/2 cup walnuts, chopped

Directions:

1.) Preheat the oven to 350F. In a standard mixer, mix eggs, coconut oil, and milk together until combined (it will be chunky, that’s ok).

2.) In a separate bowl, mix 1 cup of the flour, the coconut sugar, baking soda, and baking powder.

3.) Slowly add the flour mixture to the egg mixture, beating slowly.

4.) Then pour in mashed banana until combined.

5.) Then add in vanilla extract and remaining 3/4 cup of flour, and mix only until combined.

6.) Stir in chocolate chips (and walnuts if using). Pour batter into a parchment-lined loaf pan. Bake for an hour uncovered and then cover with tinfoil if it’s browning too much be bake for another 15-20 minutes.

Let it cool, cut, and ENJOY! Store in an airtight container for 4-5 days!
