Easy No-Bake Cookies (gf, vegan, refined sugar free)
No-Bake Cookies (gf, vegan, refined sugar free)
Serves: ~ 14 cookies
Ingredients:
3 TBS unsweetened non-dairy milk (or cow’s milk)
¼ cup filtered coconut oil
½ cup maple syrup (or ¼ cup maple syrup and ¼ cup honey work great too!)
2 TBS cocoa powder
¼ cup + 1 TBS natural, creamy peanut butter
½ tsp vanilla extract
1 ½ cups quick oats
Directions:
1.) In a medium sized saucepan, combine the milk, coconut oil, maple syrup, and cocoa powder. Stir well with a metal spoon.
2.) At medium heat, boil the mixture for 3 minutes. Continue stirring throughout the 3 minutes, scraping the bottom of the pan so nothing burns while keeping the mixture at a rapid boil.
3.) After the 3 minutes, remove the pan from the heat, and stir in the peanut butter, and vanilla until the mixture is fully combined.
4.) Lastly, stir in the oats and make sure they’re fully coated in the chocolate-peanut butter mixture.
5.) Line a plate with parchment/wax paper (make sure the plate can fit in your fridge).
6.) Then use a cookie scoop to drop the no-bake mixture into even mounds on the parchment/wax-lined plate. Place the no-bakes in the fridge and let them harden (~1 hour).
