Easy Homemade Granola (vegan, gluten-free, lower sugar)

Hi everyone! I’m popping in to share this AMAZING Homemade Granola recipe that will be sure to get your whole family’s stamp of approval! We go through a batch of this in basically 24 hours, but feel free to cut the recipe in half if that works better for you!

This recipe uses minimal pantry ingredients, is lower in sugar, and the best part (in my opinion) is that once it completely cools after baking, you can either break it into chunks if you like chunky granola or you can crumble it up (or do half and half to satisfy all fam members hehe).

Not only does the cinnamon in this recipe add a touch more of sweetness to the granola, but it truly makes the whole house smell like cinnamon rolls, and I quite literally wish I could bottle up the scent and turn it into a candle!

Since I can’t do that though, alas, here is my Easy Homemade Granola recipe!

Easy Homemade Granola

Ingredients:

4 cups rolled oats

2 TBS flax meal or chia seeds

2.5 tsp cinnamon

1/2 cup white or coconut sugar

1/2 tsp salt

1/4 cup + 1 TBS coconut oil

1/4 cup + 1 TBS avocado oil (I haven’t tried replacing the avocado oil with coconut oil so experiment at your own risk!)

2 tsp vanilla extract

5 TBS water

Directions:

  1. Preheat the oven to 325F. Line a baking sheet with parchment paper. Set aside.

  2. In a medium-sized bowl, mix together the oats, flax meal, cinnamon, sugar, and salt. Stir until combined (the sugar will probably fall to the bottom of the bowl so make sure to give it a good hearty stir from the bottom). Set aside.

  3. In a microwave-safe bowl, add the coconut oil, avocado oil, and vanilla extract and microwave until coconut oil is melted. Mix until well combined.

  4. Add the oil mixture to the dry mixture, stir well, and then add the water. Stir again and make sure that the oats are evenly coated in the wet mix.

  5. Pour onto a baking sheet and bake for 35-40 minutes (start with 35!), or until the edges look slightly browned and the granola is no longer wet.

  6. Let cool for one hour before breaking into chunks!

Store in an airtight container for up to two weeks.
