Paleo Chocolate Cupcakes (grain free)
Paleo Chocolate Cupcakes ( grain free)
Serve: 10-11 cupcakes, 28 mini cupcakes
Dry Ingredients:
¾ cup almond flour (My favorite is Bob’s Red Mill)
¼ cup coconut flour
½ cup cocoa powder [ I have not tested this recipe with cacao powder! Test at your own risk :-) ]
1 tsp baking soda
Wet ingredients:
¼ cup filtered melted coconut oil ( I recommend using only filtered {we buy ours from Trader Joe’s}. If you use unfiltered coconut oil, the cupcakes will have a coconut taste to them. )
½ cup unsweetened applesauce
1/2 cup honey
¼ cup unsweetened chocolate, finely chopped OR to make the cupcakes a little sweeter, you can use semi-sweet chocolate! ( I use Eating Evolved’s 100% cacao midnight coconut chocolate! It works like a charm and melts super easily!
2 eggs, ROOM TEMP
¼ cup boiling water ( I just put water in a glass cup and microwave it until the water starts bubbling!)
Directions:
Preheat the oven to 350 F. Generously spray your silicone cupcake molds (or aluminum tins/cupcake pan) with non-stick cooking spray! (Don’t skip this step; it’s super important!)
Combine the dry ingredients in a large bowl.
In a medium microwave safe bowl, melt coconut oil and chopped chocolate just until melted. (You do NOT want the coconut oil/chocolate mixture to get too hot or else it could scramble the eggs in the next step!!) Stir well. Mix in the applesauce and honey. Stir well.
Then, add the eggs to the wet ingredients and beat beat beat!
Pour the wet ingredients into the dry and stir just until combined. Then, add in the boiling water and stir really really well.
Fill your cupcake tins ¾ of the way full.
Bake* for 22-25ish minutes.
Notes: * These bake incredibly well as mini cupcakes too! Bake between 20-22 minutes. Also, try not to open the oven until you've baked them for at least 20 minutes to ensure the best turnout!!
These cupcakes rise but do not have a dome-shaped top. If they come out with a pretty flat surface, then you're on the right track! And anyway, the flat surface is perfect for some frostingem!
