Double Chocolate Paleo Banana Bread
Happy August, Friends! Where has this summer gone?! Ahh! I start school in 2 short weeks which means I’m going to be needing all the nourishing snacks to keep me fueled up. That’s where this Double Chocolate Paleo Banana Bread comes in!
Nobody will ever know this bread is dairy, grain, and refined sugar free! My cute little neighbor tried the bread and ended up eating three slices because she loved it so much. When I put the lid on the banana bread, she said (and I quote), "Whattttt?" I kid you not she chased me around the kitchen. What are you waiting for??!!! Ready, set, get baking!
Double Chocolate Paleo Banana Bread
Ingredients:
Dry Ingredients:
1 1/2 cups almond flour ( I like Bob's Red Mill)
1/2 cup cocoa powder
2 TBS coconut sugar
1 tsp baking soda
Wet Ingredients:
1/4 cup coconut oil ( I like to use the filtered kind from Trader Joe's because it doesn't have a coconut taste. If you use virgin coconut oil, just be aware that it may have a slight coconut taste!)
1 1/2 cups mashed banana {about 3 small RIPE (this is key!) bananas- please make sure to measure out 1 1/2 cups and not just use 3 bananas!}
1 egg
1/4 cup pure maple syrup
1/2 cup chocolate chips ( I like chopping up this chocolate!)
Directions:
Preheat oven to 350F. Line a standard loaf pan with parchment paper or spray it with non-stick spray.
In a glass pyrex (or microwave-safe bowl), melt the coconut oil and set it aside to cool.
In a large bowl, mix all of the dry ingredients together.
In a separate bowl, mix together the mashed banana, egg, and maple syrup until well combined. Then add in the cooled coconut oil and mix again.
Pour the wet ingredients into the dry, mixing until well combined. Stir in the chocolate chips.
Pour batter into standard loaf pan and bake for 1 hour, or until a toothpick comes out clean. (Remember, every oven and pan is different so baking times will vary. I recommend starting with 55 minutes and going from there. You can always add more time but if you over-bake the bread, it won't be as moist, ew! )
ENJOY! Store in an airtight container for up to 4 days.
