Banana Oatmeal Chocolate Chip Cookies
dairy, gluten, and refined sugar free

Banana Oatmeal Chocolate Chip Cookies
Ingredients:
1 cup oats
3/4 cup oat flour ( I make my own by blending oats in the blender until they resemble flour)
1 TBS chia seeds
1.5 tsp baking powder
3/4 tsp cinnamon
1/4 tsp salt
1/2 cup mashed banana (roughly one banana, but measure to make sure!)
2 TBS coconut oil or butter, softened
1 egg
1/4 cup coconut sugar (or white, granulated, or brown sugar)
1/2-3/4 cup add-ins (I used raisins and chocolate chips but feel free to switch it up to suit your preferences!)
Directions:
Line a baking sheet with parchment paper and preheat your oven to 350F.
In a medium-sized bowl, stir together the oats, oat flour, chia seeds, baking powder, cinnamon, and salt until combined. Set aside.
In the bowl of a standard mixer, use the paddle attachment and mix the banana, coconut oil (or butter), egg, and coconut sugar, and beat on medium high until very well combined (there might still be chunks of banana which is ok), scraping down the sides of the bowl when needed.
With your mixer on a low speed, add the dry ingredients to the wet ingredients and combine just until the flour gets mixed in. Then, mix in the add-ins. At this point, the batter will be a bit wetter than most cookie doughs and that is 100% correct!!
Using a cookie scoop, drop 12 mounds of dough onto your baking sheet and lightly flatten the top of each cookie.
Bake the cookies for 10 minutes, or until the cookies feel set on top and no longer look wet.
To prevent the cookies from continuing to cook after they’re removed from the oven, I slide the parchment paper off the baking sheet and onto the corner for the cookies to cool.
Let the cookies cool completely before storing them in an air-tight container!
Note**: they are best the first day!!!
